<p>On the way home from our vacation yesterday, we stopped in downtown Great Barrington, MA and I was so happy to find a cupcake shop, <strong><a href="http://www.barringtonbites.com/" target="_blank">Barrington Bites</a></strong> . . . the one and only cupcake shop in Great Barrington. It's the cutest little cupcake business that specializes in mini cupcakes and it's located inside of <strong><a href="http://www.thechefsshop.com/﻿" target="_blank">The Chef's Shop </a></strong>on Railroad Ave. I was super happy to see that <strong><a href="http://www.barringtonbites.com/" target="_blank">Barrington Bites</a></strong> carried two flavors of gluten free cupcakes so I was able to get a special cupcake just for my daughter and of course for myself and hubby. And, what a delicious dessert we had last night - it was so great to end our vacation back at home on a sweet note. I love the mini cupcakes and these are amazing, they're definitely gourmet and full of flavor. My hubby and I shared a Peppermint Patty and The Elvis cupcake and our daughter had the gluten free Ginger cupcake which quickly disappeared. <em>{the Chocolate Souffle is also gluten free as it's a flourless cupcake}</em> My hubby and I also tested the Pink Lemonade cupcake which was probably my favorite of the three although picking a favorite wasn't easy.</p>
<p>There are 28 flavors to choose from at <strong><a href="http://www.barringtonbites.com/" target="_blank">Barrington Bites</a></strong> and they all sound so yummy, including: French Toast, Strawberries &amp; Cream and Chocolate Orange. It's of course made with her amazing <strong><a href="http://simplygluten-free.blogspot.com/p/flour.html" target="_blank">gluten free flour blend</a></strong> that she sells via her web site. I'm not paid at all to make this endorsement, I just happen to be a HUGE fan of her flour. With my daughter being on a gluten free diet, baking with the flours that you find in the stores can prove to be challenging. Once I tried <strong><a href="http://simplygluten-free.blogspot.com/p/flour.html" target="_blank">Carol's special gluten-free flour mix</a></strong>, I was hooked. Everything I've made with it tastes just like before going gluten-free, sometimes even better, although you may not believe me and I understand. But, even my hubby and parents are totally sold on the results.</p>
<p>I thought this <strong><a href="http://simplygluten-free.blogspot.com/2010/07/gluten-free-pineapple-upside-down-cake.html" target="_blank">pineapple upside down cake</a></strong> would look beautiful to present to your guests at a bridal shower or even a wedding that might feature different cakes for your guests to select from. Don't you just love the beaded ribbon weaved in the scalloped edge of the dessert stand?</p>
